Start the Day Right

For some reason people seem to think that going Vegan means throwing their entire perception of meal times out of the window. Sure, you aren’t going to be eating the same stuff you were before, especially if it was particularly unhealthy or meat/dairy laden, but this doesn’t mean you can’t still enjoy every meal. Veganism isn’t a tasteless life of torturously working through bags of organic kale; lots of Vegans still indulge at every opportunity and why not.

Starting with the first and most important meal of the day; breakfast. Here thanks to many traditions or new eating habits (like the McDonalds breakfast) people often think breakfast is a meat eater haven and doesn’t really shape up for veggie lovers. This however couldn’t be more inaccurate, breakfast (just like any meal) is what you make of it. If you put the time in or even just switch out some ingredients you can begin your day with some tasty and healthier treats that will give you the energy and mindset to make it through the day. Here are some options worth creating.

Smoothie/Shake

Now you may already be pulling a face at this suggestion, but smoothies aren’t all bitter vegetables or watery juices, they are easy and can be full of goodness and flavour. What’s great about these is that with a simple blender you can make breakfast quick, without compromising on nutrients. All you need is fruit, water and ice, it’s really that simple. If you do want something a little more inviting then swap out your water for a dairy alternative and add some extra frozen bananas and peanut butter for thickness.

Tofu Scramble

This is one that people are always keen to make since morning eggs are often missed by those converted late. This is an easy substitute however, cut your tofu into chunks, throw in a pan of oil, add some garlic, turmeric and salt and you are pretty much there. This makes a fantastic base for variation, throw in some spinach, chickpeas extra spices or keep it simple, its all up to you.

Pancakes/Crepes

A favourite around the world, these morning discs delight the eyes and fill the bellies of kids and adults alike. Its not hard to find a vegan pancake recipe online, especially since its often so close to one you already used it’s a wonder why you hadn’t thought of it already. Crepes can be made sweet or savoury too which is fantastic for swapping jams out for veggies or vegan meat alternatives.

Breakfast Burrito

Another wrap that keeps you satiated until lunch time. The breakfast burrito is a genius idea, simply take a tortilla and fill it with beans, avocado, peppers, a little spice and some seitan for a hearty mexi-style breakfast. The combinations here are once again endless which means you will probably end up doing this over and over again once you try it. Use the wraps as a vessel for your tofu scramble, add some seasoned vegan mince or try some shitake bacon in them to switch things up, no matter what you pack them with, you wont regret it.
